Antibacterial and Antioxidant Activities of Edible Film Incorporated with Silver Nanoparticles Synthesized using Rhizophora mucronata Extract

Abstract Edible film is an alternative packaging material to replace plastic. Protecting the product from oxidation processes and microbiological activities one of its functions. One biopolymers used for base edible fish gelatine Pangasius sp. skin. Silver nanoparticles Rhizophora mucronata were added increase film’s antioxidant antibacterial ability. This study aims determine effect silver on film‘s activity. The method in research was experimental with five treatments concentration (0%, 2%, 4%, 6%, 8%). A statistical approach Simplex Lattice Design. Antioxidants ( Escherichia coli, Salmonella Staphylococcus aureus ) films analysed. results showed that different concentrations significantly affected films’ enriched ranged 41,085% 66,815%. Weak recorded three bacteria species: 0.07mm-0.26mm; coli 0.215mm-0.575mm; 0.33mm-0.44mm. optimum 5.96%.
